“I’ll just have a salad.”
We’ve certainly all said it, but have you ever thought about just how inadequate those words are? Sure, the initial picture that pops in your head when you think of the word “salad” probably involves some leafy greens, carrots and tomatoes (or, if you sort through as much stock photography as we do, maybe something more like this). But salad recipes can take many forms — they can be primarily tomato with some mozzarella and a little basil for a caprese salad, or they can be comprised entirely of sauteed veggies, or be made of a few veggies and some chicken mixed in with quinoa. When you think of all the different ingredients that you can pop in a salad, the options become virtually limitless.
And, as it turns out, even if you limit yourself to using just five ingredients (or less), you can come up with quite a few salad recipes!
Shari’s Berries recently shared an infographic with us featuring 15 summer salads using less ingredients or less. And these aren’t just your everyday ingredients — we’ve got fennel, green beans, lentils, raw almond butter and more. If you’re looking for a little salad inspiration, I think these ideas will leave you itchin’ to get into the kitchen.
Do you have a go-to summer salad? I continue to be in love with spinach, strawberries, avocado and goat cheese! —Kristen
