  1. My favorite plant based dishes are soups and stews. You can pretty much throw anything into a stew pot and create an amazing meal.

  2. My favorite veggie mean is a No-Cream Creamy Basil Spinach Soup. It is made creamy with zucchinis!

    That or Couscous with chickpeas and oranges. With a little white balsamic, it is delish!

  3. My favorite is a huge salad with Romaine, Artichoke Hearts, Edamame, Mushrooms, Tomatoes, and Sugar Snap Peas!

  4. I love eggplant rollatini and spaghetti squash “pasta” with feta cheese, mushrooms, spinach, and olive oil. Yum!

  5. I love lentil soup with coconut milk, and it’s not exactly a dish, but lately my “lazy dinner” is pasta with whatever veggies I have in the fridge and tons of garlic 🙂

  6. Oh My how do I pick…veggie burgers, hummus, root veg.gratin, breakfast salad, big ass salad, eggplant lasagna….I’m hungry now.????

  7. I’m a huge lover of lentils so a nice hot bowl of lentil stew is my ideal plant-based dish. I take the opportunity to include whatever leftovers I have in the stew since lentils are a great combo with most everything. I always include a chopped dried red chili pepper to make it extra hot though! Thanks for the great giveaways this week!

  8. I love grilled or steamed vegetables! I also really like vegetarian lasagna! Thanks for the giveaway!

  9. I love grilling marinated veggies (red wine vinegar, rice wine vinegar, soy sauce, and spicy brown mustard).
