Summer is perfect soup weather. Cold soup, that is.
I love those warm weather big ass salads as much as the next girl, but when the temperature really begins to rise, nothing satisfies like a refreshing bowl of chilled soup. Many are of the ‘blender to bowl’ variety, making cold soup an easy-to-make, last-minute supper idea.
The soup du jour can be a sexy little starter, like this tangy strawberry rhubarb soup, or a hearty meal in itself. Gazpacho is a great soup to make when the garden is overflowing and the perfect way to sneak in those five servings of veggies a day.
