There’s little worse than getting a small bowl of limp lettuce and a few pathetic shreds of carrot when you’ve ordered a salad at a restaurant. But, by the same token, there’s little better than packing an enormous bowl full of fresh (or sauteed) veggies and protein.
And that’s exactly what today’s Munch It Monday is all about! Week 4 of the February Fit Bottomed Challenge is continuing the theme of love, and we truly love our Big-Ass Salads. Love might even be putting it mildly — adore, covet, cherish, treasure probably better define our true feelings, and we want you to feel the same way.

Munch It Monday, February 23
What’s in a big-ass salad, you ask? Anything you want! Stick to a few select ingredients or clean out the fridge and pack it full of flavors and colors. Jenn’s got all the specifics on her fave version, and I’m kinda partial to layering mine, but there’s no one right way to make one. Shoot, you can even saute your salad veggies. Or fruit! One of my latest kicks has been sauteing chunks of apples or pears to add to a salad — you wouldn’t believe what it does to the overall flavor. And don’t be afraid to explore foreign flavors! Tossing in some beans, quinoa, chicken or fish will give you added protein and — you guessed it — add to the yumminess. Oh! Or eggs! Or nuts, or seeds!

So, for today’s Munch It Monday Challenge, make — and eat! — a big-ass salad. Pro tip: While you’re in the kitchen chopping and prepping, chop some extra ingredients to make tomorrow’s salad (because, yep, you’re gonna want another one!) a breeze to put together.
