For years I made due with sub-par knives. I was cheap and I was stubborn and I honestly thought that if I could just get my knife skills up to speed, my food prep would be a cinch no matter what knife I used.
I was so terribly wrong.
Now, my No. 1 barrier to healthy eating is the prep — I do like cooking and I actually enjoy healthy meals packed with loads of veggies.
