I Got (Flap) Jacked

flapjackedMy ideal meal or snack has to have protein, good fat and fiber in it. Through years of intuitive eating, I’ve found that to be the magic formula to keep me feeling good, energized and happy. (Seriously, put me on a low-fat, low-protein diet and I’ll go off the hangry deep end.)

Another thing it must be? TASTY. And do you guys know what I’ve found that fits the bill for all of this? This!

I’d tried and loved FlapJacked protein pancakes and years ago I gave its protein muffins a try — but, honestly, found them to be a little dry. But, the company revamped its FlapJacked Mighty Muffins a bit and now they are the bomb diggity. You know, if bomb diggities were edible and delicious (and it was 1992 — I’m pretty sure no one but me says that phrase any more).

Certified gluten-free, with 20 grams of protein, 6 grams of fiber and 8 grams of fat, they fit my non-hangry criteria perfectly. They’re also the perfect portion-controlled size and have probiotics in them. To make one, all you have to do is add water and then microwave for less than a minute.

Boom, snack time.

I may like to add peanut butter to the top of mine … and it gets all deliciously melty. Oh yeah.

I clearly have a thing for chocolate and peanut butter, so the Double Chocolate (with peanut butter on top!) and the Chocolate Peanut Butter are my favorite flavors right now, but I have to say, all of them are good. Cinnamon Apple, Peanut Butter, Maple Pumpkin, S’mores … you can’t go wrong. (They even sell them in a variety pack — you can get six of them for about $20.)
