Hot Weather, Cold Soup

Summer is perfect soup weather. Cold soup, that is.

I love those warm weather big ass salads as much as the next girl, but when the temperature really begins to rise, nothing satisfies like a refreshing bowl of chilled soup. Many are of the ‘blender to bowl’ variety, making cold soup an easy-to-make, last-minute supper idea.

The soup du jour can be a sexy little starter, like this tangy strawberry rhubarb soup, or a hearty meal in itself. Gazpacho is a great soup to make when the garden is overflowing and the perfect way to sneak in those five servings of veggies a day.

Recipes that require stovetop time, like this curried carrot and coconut concoction are typically simple to follow and when the flavors marry overnight — yowser, you’ve got one incredibly tasty soup. (These overnighters are great for entertaining, too!)

Soup for breakfast? You bet! Fruity soups are a great alternative for when your Cheerios get boring. If you’ve got digestive issues, soups are easily absorbed; they also won’t weigh you down before a workout. Make this silky peach and yogurt soup your next breakfast of champions.

If you want to get fancy, the French classic vichyssoise is still the perfect cold soup and makes one hell of a fine meal. Traditionally high in saturated fat, this recipe rehab from my favorite celebrity chef Ina Garten uses loads of zucchini and a wee two tablespoons of heavy cream.
